As a creative girl with a science-based corporate career, I wanted an outlet that would let my love for creating things run wild. More than that, I want a space that celebrates enjoying all the good things in life that bring us happiness without guilt or fear.

I like milk in a society that loves to tell me it could be bad for me, make my skin break out, the scale move up, be unsafe to consume, harm the environment, the list goes on. WHAT?!

All I want is milk in my venti brown sugar shaken espresso at Starbucks without the shame and guilt, because it makes me feel good, makes me happy, and brings me back to a special place of nostalgia I hold near.

Cook with me! Mexican themed date night at home | Homemade salsa, margaritas, braised pork nachos

Join us as we cook around the world each weekend all from home— this week we’re exploring the vibrant flavors of Mexican cuisine! From crafting the perfect homemade salsa to diving into the world of nacho bliss and mixing up refreshing margaritas, we've got your ticket to a culinary fiesta! PORK NACHO RECIPE: 1.5 lbs pork ribs 1 tbsp butter 2 cups water chipotle peppers, seeds removed 1/2 cup apple cider vinegar 3 cloves minced garlic 3 cups beef broth 2 tsp cumin powder 2 bay leaves Taco seasoning packet 1/3 yellow onion, sliced Juice of 2 limes Juice of 1 orange For the nachos: 1 bag of tortilla chips 1 cup shredded cheddar cheese 1 jar tostitos white queso 1 can whole kernel corn 1 can black beans Pickles red onions Pickled jalapeños 1. Preheat oven to 350 F. In a large Dutch oven pot, melt tbsp butter over medium high heat and sear pork ribs on all sides. Remove from pot & set aside. 2. Add peppers, water, beef broth, apple cider vinegar cumin, lime & orange juice, bay leaves and onion + add seared pork back to the pot. 3. Place pot in preheated oven and bake for at least 3 hours. After 3 + hours, remove the pork from the pot and gently shred, it will be very tender. Keep shredded beef in a separate bowl. 4. On a lined baking tray, lay the tortilla chips on the parchment paper, followed by the shredded cheddar, queso, and shredded pork. Broil for a few minutes hntil outer chips are crispy. Top with jalapeños , onions, sour cream and salsa. HOMEMADE SALSA 1 can diced tomatoes 1/2 large onion 1 jalapeño (seeded) 2 cloves of garlic Lime juice Cilantro 1/2 tsp sugar 1 tsp salt 1/4 tsp cumin Pulse all ingredients in blender until desired consistency is reached. Season as needed to taste to balance. Chill in fridge before enjoying. PICKLED RED ONIONS 1 red onion thinly sliced 1/2 cup water 1/2 cup white vinegar 2 cloves garlic smashed 2 tsp salt 2 tsp sugar Simmer water, vinegar, sugar, salt and garlic until dissolved. Add to a jar full of sliced onions and leave on counter without lid until room temperature .
